if i put fox 40 DH shox on this gt or giant would they work properly?

Yes, it would work fine. However, you wouldnt be able to run it at the full 8" travel setting. Fox 40's are internally adjustable down to 6", in half inch increments. I would recommend you set it to 6.5" or 7" at most but a 40 will definately fit that bike.

That said, it'd be serious overkill. If you want something beefier to run on that bike, check out a Marzocchi 66 RC3... but there's really nothing wrong with the Fox fork that's on that bike to start with either. Would still be very capable of all but really large flat drops.

Also, in that price range you should really check out the Intense 6.6 and the Trek Remedy 8, they're both 6+" travel all mountain bikes that can hanle big trails. Or, if you're looking for a more dedicated freeride bike, the Trek Session 88 is super sick and comes with a Fox 40 on it already! Happy Trails!
